Pasta with broccoli

Ingredients

  • 250g pasta
  • 2-3 cups fresh or frozen broccoli, chopped
  • 1/2 tsp chilli, chopped (fresh or dried)
  • 1 clove garlic (whole)
  • 1 tbsp olive oil or more
  • 1/2 tsp salt
  • Parmesan cheese
 

Preparation

Steam the broccoli until bright green but not fully cooked. Cook the pasta in boiling salted water as per packet directions but drain before quite ready. While the pasta is cooking, heat the oil in a frying pan and add the garlic and chilli. Once golden, dispose of the garlic. Combine broccoli with garlic-infused oil and chilli; cook for a few minutes. Combine broccoli and pasta together with a splash of olive oil and heat together for a few mins until pasta is al dente. Serve immediately with grated parmesan cheese. 

Barbecued Tasmanian Salmon with Verdé Sauce

Barbecued Tasmanian Salmon with Verdé SaucePreparation time: 15 minutes

Ingredients

  • 4 x 200gr Tasmanian salmon fillets
  • ½ tbsp extra virgin olive oil
  • ½ cup whole egg mayonnaise
  • 2 tbsp chopped mixed herbs, eg, parsley, chives and dill
  • 1 tsp lemon juice
  • Season to taste
 

Preparation

To make verdé sauce combine the mayonnaise, herbs and lemon juice in a bowl. Stir well, season to taste. Heat barbecue to medium-high. Brush salmon fillet with oil and cook for approximately 3 minutes on each side, depending on thickness. Serve each fillet with verdé sauce, pommes croquette and mixed salad leaves.
